We make our cured sausages during the long, cold and dry winter in Soria. This allows them to have a gentle curing process which is completely natural, and can take upto 4 months, depending on the temperature and the relative humidity of the environment. The careful selection of the raw materials and the meticulous fabrication process of our sausages have resulted in Zardoya Gómez to be recognized as an Artisan company by the Government of Castilla and León.
